1 1/4 cups vegetable stock or water- Place the stock or water in a pan over high heat and bring to a boil. Add the cilantro root, reduce heat to low, and simmer for 10 mins.

1 fresh cilantro root lightly pounded- increase the heat to medium, and add the cucumber and chopped onion. Season the soup with the fish sauce or salt and sugar, stir well, and simmer for about 3 mins.
1 1/2 cups seeded and coarsely chopped cucumber.
3 tablespoons peeled and coarsely chopped onion- Stir in the scallions, then transfer the soup to a serving bowl. Sprinkle with the golden fried garlic, and garnish with cilantro leaves and a sprinkling of pepper.

4 1/2 teaspoons Thai fish sauce or salt to taste for vegetarians
1 1/2 Teaspoons sugar
2 scallions, cut into 1-inch lengths
1 Teaspoon golden fried garlic

For the garnish
A few fresh cilantro leaves
A pinch of ground black pepper

Serves 4 as part of a main meal or 2 as an appetizer
